For the Squids
2 tablespoons olive oil //
1 onion, finely chopped //
2 garlic cloves, finely chopped or pressed //
8 oz/250 g finely diced squid tentacles and wings //
For the Red Sauce
1 tablespoon flour //
1/2 cup4 fl oz/125 ml dry red wine //
3 or 4 chopped chilies, seeds removed, or 4 teaspoons chili powder//
Salt and freshly ground pepper//
1 teaspoon paprika //
Juice of 1 lemon //
1 } Heat the olive oil in a pan and sauté the onion and garlic until transparent.
2 } Add the squid and fry for 1 minute, stirring constantly.
3 } Remove from heat and stir in the flour.
4 } Return to the heat and cook for 2 minutes, then add the wine, chilies, salt, pepper and paprika. Simmer for about 45 minutes or until the squid is
