Serving a continental culinary mix, mains on the dinner menu incorporate such varied delights as briks – a North African pie of artichokes, cheese, olives and preserved lemon, slow-cooked Australian beef short rib, M’s crispy suckling pig and hot-smoked Salmon. Using the fresh bounty offered up by China – including surprising ingredients such as foie gras and black truffles – the menus take inspiration from the flavours found at Beijing’s marketplaces.
