Chef Gary Johnson cooks from scratch – and that scratch comes from an idyllic organic farm and ranch on the lush eastern coast of Maui. Sandwiches on artisanal bread, smoked meats, a daily fresh selection of the most exquisite pastries, a popular burger made with grass-fed beef – it’s all here, and it’s all natural. The menu draws from various influences, from Vietnamese (lemongrass pork banh mi, anyone) and Italian (think sweet potato gnocci), to Hawaiian (like seared Ahi). Sunday brunch is one of superlatives, offering up solid renditions of delectable staples like eggs Benedict, brioche French toast and toasted banana bread.
