Chef Scot Kirton injects a Gallic flavor into his cuisine at La Colombe, a sophisticated restaurant at the Silvermist Wine Estate in Constantia. It’s well worth the drive to the suburbs to experience his mastery of local ingredients – when springbok is on the seasonal menu, make sure you order it. Also worth trying: the foie gras served with langoustine, hazelnut, caramelised endive and jasmine tea.
