From the mind of former miner-turned-bar-entrepreneur Ashley Sutton – who is leaving a swathe of mould-breaking thematic drinkeries across Asia – comes this Hong Kong outpost, nestled behind “Mr Wong’s Aviary”. Make it past Mr Wong himself and his fantastical mock-bird shop to “see” Ophelia, and you’ll find flourishes of peacock detail accentuating a myriad of birdcages – some containing dancers giving animate energy to the vibrant, albeit darkened lounge, and others containing the bar’s thematically on-point cocktails. Morsels paired to the flamboyant drinks come courtesy of chef Angus Harrison, who plates creative dishes of tapas boasting an Australian twist.
