Dubbed the Tastemaker to the Nation, gastro superstar Jiggs Kalra’s truly pan-regional Indian cuisine captures the grandeur of old-world recipes from around the country. Still, despite its historic premise, the food here is anything but dated: Kalra puts a spin on each dish by employing largely contemporary cooking techniques, including the principles of molecular gastronomy.
