Set in a lovely mansion featuring an open kitchen that sports a vitraux backdrop, chef Santiago delves into various corners of his Colombian homeland and Latin America. His seven-step tasting menu might include a Peruvian chupe soup or coffee-braised pork shoulder. Named One To Watch at 2015’s Latin America’s 50 Best Restaurants awards.
