Northern Italy meets Scandinavia in Restaurant Brace, and in more ways than one. Nicola Fanetti hails from Lombardy, Italy, where he learnt Italian cooking techniques at ALMA. He moved to Denmark in 2011, and his integration of New Nordic approaches with traditional Italian dishes is the theme behind Brace.
