Heinz Beck's Michelin-starred Rome masterpiece

Strange as it may seem, the only restaurant in the capital to boast three Michelin stars is run by a Bavarian chef. Heinz Beck, a 20-year Rome transplant, honed his chops at Munich’s famous Tramin restaurant, taking over the kitchen at La Pergola in 1994. Today, Beck’s cuisine combines perfect technique and presentation, with dishes range from unprecedented combinations – such as scallops with beans and pork rind – to artfully reinterpreted classics, such as cheese and pepper pasta with shrimps and lime.
