At Enju, still refreshed from a recent face-lift, chef Naoki Takahashi emphasises exquisite seasonal produce in dishes like conger hamo fish steamed in kudzu starch with matsutake mushroom. Almost as much of a source of pride as the cuisine served is the beauty of the surrounding area, situated as it is in Happo-en – or the garden of the eight views – where you can enjoy your meal amid grounds covered in cherry blossom in the spring, to deep layers of snow in the winter.
