Argentina’s top female chef, Soledad Nardelli, also has an award-winning TV show. At Chila, urban meets sophistication at its modernised warehouse location in upmarket Puerto Madero. Her menu places emphasis on farm-based cooking with clean, vibrant flavours: meats such as beef, duck and rabbit are key. Nardelli is one of New Argentine Cuisine’s main purveyors, and has two seasonal tasting menus in play. Think black Antarctic hake with seaweed and samphire or 45-day-matured beef slathered with chimichurri.
