Eco-consciousness runs through the fabric of the renovated Pfösl, a historic family-operated inn placed in the abundant hills and lush forests of the Dolomites. Furniture and fittings in the accommodation – its dark-pine chalets a classy addition – are carved from Alpine solid wood sourced from the surrounding valley; the hotel’s energy is generated by a biomass heating system. That left-field mantra extends to the food offerings, evidenced by nourishment including gluten-free muesli and lactose-free diary items.
