The Old Clare is, in fact, a very new hotel, named after the pub that once occupied the same heritage-listed building in the not-quite-gentrified Chippendale area. Converting it without stripping away the layers of history was a daunting task, even for Unlisted Collection, known for their challenging and unique transformations. Now that it has opened its doors, it has become clear that the new Old Clare is a welcome addition to the Sydney hotel scene ... and well worth the wait.
