These are spearheaded by Toro, helmed by acclaimed chef Richard Sandoval, who creates dishes inspired by the spirit of Latin America in a suitably eclectic environment. Alignment with celestial bodies is also a theme in the magnificent St. Regis Spa, which features eight suites and a standalone salon, inspired by Mayan astronomy and featuring treatments that make use of local herbs and plants sourced in the resort’s secret garden.
