Award-adorned chef Arnaud Donckele serves up conceptual dishes with the accent firmly on seafood at this three-Michelin-starred beach hotspot within the desirable Résidence de la Pinede.
While there are ample piscine options – baby lobster with broad beans and white asparagus tips or Tarbouriech oyster accompanied by anise-flavoured fennel to name just two – guests are offered the produce of the Mediterranean land too. Standouts are the black truffle and foie gras-stuffed pasta, and egg-white omelettes peppered with subtle-flavour vegetables.
